Ingredients
- 4 organic chicken Italian sausages, sliced into rounds
- 4 cups broccoli florets
- 1 (16 oz) bag baby rainbow carrots
- 2 shallots, quartered
- Garlic powder to taste
- Avocado oil (for high heat cooking)
Instructions

Prep all ingredients: slice sausages into rounds, cut broccoli into florets, quarter the shallots.

This is one of my go-to busy weeknight meals. If you buy pre-chopped broccoli, it comes together even faster. I love topping mine with hot sauce, but it's also delicious with pesto, balsamic vinaigrette, or a creamy avocado dressing. This recipe is perfect for meal prep—it reheats beautifully for packable lunches throughout the week.
