Egg Nest Taco Bowl
A satisfying one-pan meal featuring cauliflower rice, seasoned ground beef, power greens, and a perfectly cooked egg nestled in the center.

Ingredients
4-5 oz grass-fed ground beef (or ground turkey, chicken, or mushrooms for vegetarian)
1 cup cauliflower rice
2 cups power greens or spinach
1 pasture-raised egg
1 tbsp avocado oil
2-3 tbsp hot sauce (I love Siete traditional)
Salt and pepper to taste
For serving: sliced avocado with chile limón seasoning
For serving: grain-free tortilla chips (Siete nacho flavor is my favorite)
Instructions

Heat avocado oil in a skillet over medium heat.

Add cauliflower rice and ground beef to the pan.

Season with hot sauce, salt, and pepper. Sauté until the beef is browned and cauliflower is tender, about 8-10 minutes.

Add power greens to the pan and stir until just wilted.

Use a spoon to create a well (or "nest") in the center of the mixture.

Crack the egg directly into the center of the nest.

Cover the pan with a lid and cook until the egg is done to your liking—about 3-4 minutes for a runny yolk, longer for a firmer egg.

Transfer to a bowl and serve with chile limón avocado slices and grain-free tortilla chips.

This is one of my favorite quick, satisfying meals. The "egg nest" technique is a game-changer—you get a complete meal cooked in one pan with minimal cleanup. For vegetarian, swap the ground beef for chopped mushrooms and cook the same way. I recommend pasture-raised eggs (like Vital Farms) for the best flavor and nutrition. The runny yolk acts as a sauce that brings everything together!
