Egg Nest Taco Bowl
A satisfying one-pan meal featuring cauliflower rice, seasoned ground beef, power greens, and a perfectly cooked egg nestled in the center.

Ingredients
- 1/2 lb grass-fed ground beef (or ground turkey, chicken, or mushrooms for vegetarian)
- 1 cup cauliflower rice
- 2 cups power greens or spinach
- 1 pasture-raised egg
- 1 tbsp avocado oil
- 2-3 tbsp hot sauce (I love Siete traditional)
- Salt and pepper to taste
- For serving: sliced avocado with chile limón seasoning
- For serving: grain-free tortilla chips (Siete nacho flavor is my favorite)
Instructions
- 1
Heat avocado oil in a skillet over medium heat.
- 2
Add cauliflower rice and ground beef to the pan.
- 3
Season with hot sauce, salt, and pepper. Sauté until the beef is browned and cauliflower is tender, about 8-10 minutes.
- 4
Add power greens to the pan and stir until just wilted.
- 5
Use a spoon to create a well (or "nest") in the center of the mixture.
- 6
Crack the egg directly into the center of the nest.
- 7
Cover the pan with a lid and cook until the egg is done to your liking—about 3-4 minutes for a runny yolk, longer for a firmer egg.
- 8
Transfer to a bowl and serve with chile limón avocado slices and grain-free tortilla chips.
